The process involves deeply sniffing the coffee, then loudly slurping the coffee so it spreads to the back of the tongue. The taster then attempts to measure aspects of the coffee taste, specifically the body, sweetness, acidity, flavour, and aftertaste.

Cupping is not just about finding good coffee. It is about training your palate to recognize the subtle differences between origins, processing methods, and roast levels.
